4 c. peeled butternut squash, cut into cubes
2 c. red onion, chopped
4 bacon slices, cut into 1" pieces
1 Tbs. chopped fresh rosemary
1 garlic clove, minced (or garlic powder will do)
4 Tbs. extra virgin olive oil
1 lb. penne pasta
6 oz . fresh spinach leaves, torn into large pieces
2 oz. fresh grated Paremesan cheese

Cook bacon in large pan on stove. Once bacon is crispy, add squash (leaving bacon & drippings in pan) and cook until tender. Meanwhile, in seperate pot, cook pasta. Once squash is done, add red onion, rosemary, garlic and cooked pasta. Cook for approx. 5 minutes, then add spinach -- cook until spinach is just wilted. Sprinkle with Paremesan cheese and serve.
