1 1/4 C flour
3 1/2 tsp. baking powder
3/4 tsp salt
3 tablespoon sugar
1 egg well beaten
1 cup milk
3 tablespoons melted shortening

Directions:

Mix together and spoon onto hot griddle. Cook until bubbles form and bottom is lightly brown. Flip and cook until brown on that side.

Your children will love to help you make these. Use what ever you want to put on top. Sometimes I would make sandwiches out of the pancakes by putting peanut butter on them with jam. My children loved it when I would add a little cocoa, chocolate chips in the batter. You can add anything you like to make it healther.
