Roast Orange Chicken Recipe

4-5 lb Chicken
fresh rosemary and thyme
salt and pepper
orange juice
2 small onions
White wine
1/2 c melted butter
3 T honey
3 T dijon mustard
orange marmalade
grand marnier

Directions:
Directions:
Salt and pepper chicken then rub with fresh rosemary and thyme, chopped. Cut orange in half and squeeze the juice over the chicken. Place cut orange peels with onion inside of chicken. Pour 1-2 cups of white wine over chicken. Bake 400 for 30 minutes. Periodically glaze with the following:
1/2 c melted butter, 3 T honey, 3 T dijon mustard, 2 heaping T orange marmelade and grand marnier (I use 1/2 cup)
Reduce oven to 350 and bake 1 more hour glazing periodically.
