4 butterfly pork chops
1 bell pepper, slivered or sliced
1 sm pkg or can of baby carrots
1 can chunk pineapple
1 small handful snow peas in the pod
1/2 c vinegar
1/2 c sugar
3/4 c water
4 T soy sauce
1 c rice, cooked til tender
1-2 T cornstarch
salt and pepper to taste

Saute meat and bell peppers until golden brown. In sauce pan, mix water, sugar and vinegar, bring to a boil. Remove from heat, add cornstarch to thicken. Add soy sauce. Pour over meat and pepper still in the skillet. Add pineapple and stir in lightly. Add baby carrots, cover and cook over low heat until carrots are tender. Serve over bed of rice.
