3/4 lb. fresh salmon fill,et
1/2 tbsp. olive oil
1 tbsp. pure maple syrup
1/4 tsp. soy sauce
1/2 tsp. fresh lemon juice

Directions:
Prepare charcoal grill and let coals burn down or preheat gas grill 10 minutes. Place a sheet of foil on plate large enough for fillets with plenty of space around them. Pour most of olive oil on foil. Rinse and pat fillets dry and place them on the olive oil, skin side down. Drizzle remaining few drops on flesh side of fish.

Whisk together the syrup, soy, and lemon juice. Spoon 1/2 onto the fish.

Place fish with foil on grill. Leave the foil open but close the lid of grill. Check after about 5 minutes and drizzle about 1/2 of the remaining syrup mix on fish. Close the grill and finish cooking about 5 to 7 minutes. Gently test the flesh for firmness with a fork or spatula. It should be moist but opaque at the thickest part when its done.

To serve, lift the fillets off the foil with spatula and place on serving plates. Drizzle the last of syrup mix onto the fish before serving.
