Hot Mustard Sauce: 1 beaten egg
1/4 cup finely packed brown sugar
3 tbsp. granulated sugar
2 tbsp. Dijon mustard
Blend in 1/2 cup vinegar and 1 tbsp. melted butter. Cook stirring constantly over low heat till thick.

Chive Butter: 1/2 cup soft butter, 2 tsp. lemon juice, 2 tbsp. chopped chives, 1/4 tsp. salt, dash pepper

Garlic Crumbs: Saute 1 cup fine, fresh bread crumbs, and 1 finely chopped clove of garlic in 2 tbsp. butter in skillet until slightly brown. Stir in 2 tbsp. parsley.

Horseradish Sauce: 1/2 cup sour cream, 2 tsp horseradish, 1/4 tsp salt, dash of pepper.
Combine.
