2 c. cooked pinto beans
1/2 c. bacon drippings
1/4 lb. sharp cheddar cheese, shredded
1/2 c. finely chopped green onion & tops (optional)


Directions:
Directions:
Mash beans or put through a food mill. Melt bacon drippings in a heavy skillet. Add beans and cook, stiring until beans turn dark and are crisp around the edges. Turn heat to low. Spread beans over bottom of skillet and add shredded cheese. Stir until cheese melts. Serve with chopped green onions, if desired.
