1 lb. ground chicken
1 can diced tomatoes with green chilis
48 oz. jar pinto beans
2 cloves crushed garlic
1 1/2 tsp. ground cumin
2 - 3 tbsp. chili powder
salt & pepper
Fresh cilantro chopped
1 tbsp. canola oil

Directions:
Directions:
In a large sauce pan or small stock pot brown the ground chicken in the oil. Add garlic and ground cumin and continue until garlic is golden. Add the can of tomatoes and chilis (do not drain) and cook until the moisture is reduced by half. Add the pinto beans (do not drain). Stir and bring to a simmer then add the chili powder and salt and pepper to taste. Garnish with fresh cilantro when served.
