1 whole chicken cut-up
1 1/2 lbs Velveeta cheese
1 can ro-tel tomatoes, diced
1 can sliced mushrooms
1 can cream mushroom soup
1 lb. spaghetti
1 onion, choppped*
1 bell pepper chopped*
3 stalks celery chopped*
Salt and pepper to taste
* I substitute fresh creole seasoning mix- 1 container found in the produce section.

Boil chicken with onion, bell pepper, celery for 45 minutes or until done. Remove chicken and add spaghetti. Bring to boil, turn off heat and let sit for 15 minutes. While spaghetti is sitting remove chicken from the bone. Saute' rotel and soup, mushrooms and Velveeta until melted over low heat. Drain spaghetti and add to cheese mixture, then add chicken and mix. Bake for 30 minutes in a 350º oven in a 13x9 casserole dish.
*Before adding spaghetti to water you may need to add extra water.
