5 potatoes, diced
2 leeks, sliced
4 carrots, sliced
1 celery, diced
1 clove garlic, diced
1 beef boullion cube
4 T. butter
1 T. flour
2 T. heavy cream

Directions:
Directions:
In a large pot with 1 quart water, add vegetables and boullion cube. Cook on medium heat for about 30 minutes. In batches, blend with Cuisinart to make vegetables very fine, then place back into pot. Melt butter and mix with flour and add to the soup mixture. Add cream and salt & pepper to taste. Serve warm. Goes well with sliced summer sausage and fresh rolls
