1 lg pkg Jello (red - your choice of flavors)
1 c pineapple juice
2 2/3 c crushed pineapple
1/2 pint cottage cheese
1/2 c chopped maraschino cherries
Pint whipped cream

Directions:
Directions:
Heat pineapple juice just to boiling. Remove from heat and add jello; stir until disolved. Mix in crushed pineapple, cottage cheese, and cherries.

In a separate bowl, whip the cream until stiff. Blend into jello mixture and chill until set. Overnight is best, it lets the flavors blend.

Here's a great jello salad that Don's Mom was famous for. All of us looked forward to her bringing this to our holiday gathereings. It was a pretty pink color She always decorated it with those gumdrop mint leaves and a few maraschino cherries - very festive.
