1 six qt. basket tomatoes
6 onions
3 red peppers (sweet)
3 cups white sugar
2/3 c. salt
3 c. white wine vinegar
5 tsp. cinnamon
3 tsp. cloves
2 tsp. ginger
1 tsp. black pepper

Place all ingredients in a large pot and boil until thick (about 2 hours).

Newer version with canned tomatoes:

Use two 28 oz. cans diced peeled tomatoes and use remaining ingredients reduced to 1/3 the amount. Once simmering is done, place in mason jars.
