1/2 lb. bacon
1/2 c. chopped onion
1/4 c. chopped green pepper
1/4 c. chopped red pepper
12 eggs
1 c. milk
16 oz. package hashbrowns, thawed
1 c. shredded colby jack cheese
1 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
Preheat oven to 350. Fry bacon until crisp, then crumble and set aside. Sautee onion and peppers in the bacon grease until tender. In a large mixing bowl, beat eggs and milk. Stir in all other ingredients. Pour into a greased 9x13 casserole dish. Bake 35-45 minutes.

This dish is a new Overdiek family Christmas tradition. Mom prepares it the night before, and then bakes it Christmas morning while we open gifts. It's easy and delicious!
