1/4 c. butter
1/2 c. green pepper
3/4 c. ketchup
2 tbsp. vinegar
2 tsp. soy sauce
1/2 tsp. salt
1 c. drained pineapple chunks (reserve juice)
1/2 c. chopped onion
1/2 c. cut-up carrots
1 c. pineapple juice
1/4 c. brown sugar
1/2 tsp. garlic salt
1/2 tsp. pepper
1 to 3 lb. chicken pieces

Directions:

Melt butter, add onion, pepper and carrots. Cook 5 minutes. Stir in ketchup, pineapple juice, vinegar, sugar and spices. Cook, stirring constantly, until mixture boils. Add pineapple chunks. Arrange chicken pieces in baking dish (9 x 12 x 2). Pour sauce and vegetables over.

Bake covered at 400 degrees for 45 minutes. Uncover and continue baking about 30 minutes longer.
