1 potato
1/2 cup part-skim ricotta cheese
1/2 cup melted butter or margarine
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp parsley
1/2 cup parmasean cheese
2 tbsp. light sour cream
1 cup 2% chedder cheese

Directions:
Directions:
Bake potato in oven until cooked. Take cooked potato and cut in 1/2 long ways. Scoop out center of both halves. In a mixing bowl put scooped out center of potato and all ingredients except chedder cheese. Mix together then scoop back into potato. Top with chedder cheese and bake at 350º for 15 minutes or until cheese is melted and heated through. Enjoy!
