2 1/2lbs. boneless beef bottome round or chuck pot roast
1/2 tsp. pepper
4 med. potatoes, cut in quarters
1 stalk celery, cut in 1" pcs.
1 med tomatoe, diced
1 can tomatoe soup
1/2 c. water
1 tbs. chopped garlic
1 tsp. each basil leaves, oregano, parsley
1 tsp. vinegar

Directions:
Directions:
Season the roast with pepper. Put the potatoes, carrots, celery and tomatoe in 3 1/2 qt. slow cooker. Top with roast.
Stir in soup, water, garlic, basil, oregano, parsley flakes and vinegar in a medium bowl. Pour soup over roast and vegtables.
Cover & cook on low for 10 to 12 hours
Remove the roast and let stand for 10 min.
