1 small to medium pumpkin
1 onion, chopped
2 tbsp vegetable oil
1 1/2 lbs ground beef
2 tbsp soy sauce
2 tbsp brown sugar
1 4 oz can mushrooms
1 can cream of mushroom soup
1 1/2 cup cooked rice
1 8 oz can water chestnuts

Directions:
Directions:
Cut off top of pumpkin and clean insides out. In a skillet, saute onion until tender. Add meat and brown. Add soy sauce, brown sugar, mushrooms and soup. Simmer 10 minutes. Add cooked rice and water chestnuts. Spoon mixture into pumpkin. Put puimpkin on baking sheet. Bake on hour at 350º until pumpkin is tender. Serve
