1 lb. dried kidney beans
1 tsp. olive oil -- optional
1 onion -- chopped
1 lb. ground beef substitute (crumbles)
1/2 tsp. black pepper -- freshly ground
1/2 tsp. salt -- optional
1 can diced tomatoes with green chilies
1 c. v-8® Hot & Spicy Vegetable juice
2 tsp. chili powder -- divided
1 dash tabasco sauce
1-2 sm. jalapeño peppers -- chopped fine

1/2 cup cheddar cheese, shredded -- optional

Directions:
Directions:
Prepare beans according to package directions till just done but still firm.
Put olive oil (if using) and onion in slow cooker (or dutch oven), heat on high till onion starts to sweat.
Stir in ground beef substitute. Season "meat" with pepper & salt (optional) [bonus for non-vegans: for more flavorful chili, add 1 tsp. beef bouillon].
Add tomatoes, v-8, beans, 1 tsp. chili powder, tabasco sauce & peppers (if using). Omit peppers for milder chili, or increase number for more of a kick. For some real wow power, substitute habenaros. Stir to combine.
Heat through on high heat till starts to simmer, then switch to low. 2-4 hrs in slow cooker (can be left on low all day). [or heat on stove top or in a 350° oven for an hour-ish).
Before serving stir in additional chili powder, tabasco and salt & pepper to taste.
Top with cheddar cheese.

Serve with cornbread, of course.

This Chilies' ingredients can easily, be adjusted to suit the tastes of vegetarians, vegans, or those simply trying to add meatless alternatives to their menu.
Kent and Jeremy ate this chili for a couple of years before finding out there was no meat in it. It has become a family favorite!
