Pumpkin Bars
1 c. vegetable oil
4 eggs
1-2/3 c. white sugar
15 oz. canned pumpkin
2 c. flour
2 tsp. cinnamon
2 tsp. baking powder
1 tsp. salt
1 tsp. baking soda

3 oz. cream cheese
1/2 c. butter
1 tsp. vanilla extract
2-1/2 to 3 cups powdered sugar
milk as needed

Combine first four ingredients using mixer; add dry ingredients and mix together. Pour mixture into a 13x9 dish and bake at 350 until done (center springs back to touch). Cool before frosting.

Soften butter and cream cheese, then mix together along with the vanilla using a mixer. Gradually add powdered sugar, mixing small amounts at a time. Add milk as needed to make frosting a consistency you like.
