Crown Roast of Pork tied by butcher (with rib tips covered with foil)
Melted butter
Herbes de Provence
Salt and Pepper

Directions:
Directions:
Preheat (convection) oven to 425º. Place crown roast in open roasting pan. Brush with melted butter. Sprinkle generously with Herbes de Provence, salt and pepper. Spoon stuffing lightly into the cavity. Roast for 30 minutes. Reduce heat to 350º and continue roasting until internal temperature reaches 175º. Cover stuffing with foil if it begins to get too brown. Allow to stand for 10 mintues before serving.
