2 tsp.olive oil
2 medium onions,finely chopped
2 medium garlic cloves, minced
1 tsp. oregano
1 20z.can evaporated milk
56 oz.canned tomatoes
1/4cup, fresh basil, finely chopped
1/8 tsp. salt
1/8 tsp. blaack pepper

Heat oil in a large saucepan over medium heat.Add onions and garlic, cook until soft, about 2 minutes. Add oregano, cook 1 minute. Add tomatoes and bring to a simmer, partially cover pand and simmer 5 minutes.

puree souup in pand using an immersion blender. or working in batches transfer mixture to a blender and puree until smooth. return pureed tomato mixture to pan.
Set pan over low heat and add milk, simmer 1 minute to heat through. emove pan from heat and dtir in basil. Season to taste with salt and pepper.
