Ingredients:  
(SALAD)
1 can chunk pineapple (drained & reserve)
1/2 lb cubed cheese (cheddar or colby),
1 cup miniature marshmallows &
1/3 cup chopped nuts (pecans or walnuts)

(DRESSING) -
scant 3/4 cup sugar,
1 rounded T flour,
1 egg, beaten &
reserved pineapple juice

Directions:
Directions:
Mix sugar, egg, pineapple juice and then flour. Cook until thick, let cool & fold in pineapple, cheese, marshmallows & nuts.

Sometimes when Mom went to a "pitch-in" dinner she took Pineapple Salad, if not her Potato Salad.
