1 frying chicken - about 2 lbs
safflower oil
salt and freshly ground pepper
1/2 c unbleached flour

Wash the chicken inside out and cut up chicken into serving pieces, dry on a kitchen towel.

Place flour in a sack. Put chicken in sack a few pieces at a time and shake to coat with flour. In the meantime, heat some safflower oil in a large heavy iron skillet or whatever is your favorite frying pan. The oil should only be about 1/4 inch deep in the skillet.

Place the floured chicken in the hot oil. Season with salt and pepper. When the first side is browned turn and season with salt and pepper. When the second side is browned place in a shallow baking dish. Repeat with remaining chicken pieces until all are browned. Place browned chicken in a 425º oven for about 40 minutes or until tender. Serve hot or cold but do not reheat.
