4 medium Vidalia Onions, sliced
12 saltine crackers, crushed
1/2 stick butter or margarine
1 can cream of mushroom soup
2 eggs
1/3 c. milk
salt & pepper to taste
grated cheese

Directions:
Directions:
Cook onions in butter until tender. Butter casserole dish and line bottom of dish with crdacker crumbs. Layer onions and mushroom soup. Beat eggs and milk and pour over casserole.
Cover with grated cheese and cracker crumbs.

Bake at 350 degrees until brown and bubbly.

The Spencer, Chaffin and Dymmek/Yost families love Georgia's best, Vidalia onions! This recipe is one of the easiest and most delicious. Great for summer BBQs. For a slightly different taste, use Ritz crackers in place of saltine crackers.
