2 Tbsp brown sugar
2 Tbsp garlic powder
2 Tbsp smoked Spanish Paprika
3 Tbsp roasted, ground cumin seed
3 Tbsp chipotle chili powder
1 Tbsp ground coriander
1 Tbsp sea salt

mix together and keep in a dry cool spot for no more than 6 months

use as a rub for poultry, pork or fish, or add to soups, stews, and cassaroles for great Latin flavor

I add this to anything that seems sad and bland. Great for fajitas, soups, grilled chicken and salmon.
