1 1/2 c. all purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. unsalted butter, softened to room temperature
1 c. sugar
1/2 c. buttermilk
2 large eggs, well beaten
1/2 tbsp. grated lemon rind
2 tsp. poppy seeds
3 tbsp. freshly squeezed lemon juice

Preheat oven to 350º. Sift flour, baking powder and salt together in a bowl. In a large mixing bowl, cream butter and sugar (beat until sugar has dissolved and the mixture is creamy) with an electric mixer. Beat in buttermilk and then beaten eggs. Add flour mixture and blend well with a wooden spoon. Stir in lemon rind and poppy seeds. Add lemon juice and mix well. Pour mixture into a greased and floured 9 1/4 inch loaf pan. Bake 45 to 55 minutes, until loaf begins to separate from the edges of the pan and a tester inserted into the center comes out clean. Makes 1 loaf.
