2 c. sifted flour
2 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. salt
2 c. sugar
1 cup cooking oil
2 tsp. soda, dissolved in a little water
4 eggs
2 cups canned pumpkin

Frosting:
1 stick of butter
1 (8 oz.) pkg. cream cheese
1 box powdered sugar
2 tsp. vanilla

Directions:
Directions:
Preheat oven to 350º. Mix together well the first five ingredients. Beat together the cooking oil, soda mixture and eggs. Add this mixture to the dry ingredients and beat for 3 minutes. Add pumpkin and mix well. Pour into a greased and floured 9 x 13 inch cake pan. Bake 30 - 35 minutes.

Mix frosting ingredients well and frost cake when cool.
Store in the refrigerator.

Company was coming for dinner. Sharon wanted to make the dessert. She was probably about 10 years old and didn't have much experience cooking. But my philosophy has always been, if you can read you can cook, so she made this pumpkin cake. Sharon went the extra mile and made it into a layer cake. It was beautiful. In fact I had never seen a cake so perfectly put together. It had straight sides and the top was completly flat. A cake that looked like this should be on the cover of a cookbook. The guests and family were impressed. But one bite of this cake revealed that it takes more than knowing how to read. Soda is not the equilivent of baking powder and measuring spoons should be leveled off. Everyone said, "Oh, if it only tasted as good as it looked."
