Olive Oil,
2-3 cloves garlic,
1 medium diced onion,
2 large diced leeks,
3-4 peeled diced potatoes (or sweet potatoes),
6 cups chicken or veg stock,
silken tofu,
chives or rosemary for garnish

Directions:
Directions:
saute til soft in Olive oil:
garlic, onion (until transparent) and leeks,
Add potatoes and stock.
Bring to a boil and gently simmer x35 minutes.
Puree small amount at time in blender. Add tofu as thickener.
