2 zucchini squash sliced (about 3 c.)
2 eggs
1 c milk
1 stick butter, melted
1 small box corn bread mix (Jiffy)
a pinch of salt & pepper

Directions:
Directions:
Put squash, eggs, milk, salt and pepper in a blender until squash is finely chopped. Add corn bread mix and blend together. Pour into a greased skillet.

Bake at 375º for about 40 minutes. Serve hot with butter.
