4 tbsp. flour
3/4 c. sugar
a dash of salt
grated rind of one lemon
1/3 c. lemon juice
1 c. boiling water
1 tbsp. butter
2 eggs lightly beaten
1 baked pie shell
1/2 cup coconut shredded

Directions:
Directions:
Mix flour, sugar, salt and lemon rind together. Add lemon juice, boiling water and butter and mix well. Cook in a double boiler for about 10 minutes, stiring constantly. Carefully add eggs and cook for 2 to 3 minutes more. Cool. Pour into pie shell and sprinkle with coconut
