6 medium potatoes
1/2 stick butter
2 c. shredded Cheddar cheese
2 c. sour cream
1/3 c. green onion, sliced
1 tsp. salt
1/4 tsp.pepper
2 T. butter (to dot)

Directions:
Directions:
1. Cook potatoes in skins. Chill (do the day before)

2. Peal and grate potatoes into large bowl.

3. In medium sauce pan over low heat, combine butter and cheese, stirring occasionally, until melted. Remove from heat and blend in sour cream, onion, salt and pepper.

4. Pour over potatoes, stirring lightly. Turn into 2 quart casserole and dot with butter. Bake 45 minutes at 350º.
