Borscht Soup Recipe

1-4 lb. chicken or beef soup meat
2 qts. water
bay leaf
3 cups beet tops, cut fine
1/3 c. green onion, chopped fine with tops
1/3 c. dill, chopped fine
1/3 c. carrots, diced
1/2 c. peas
1/2 c. celery, finely chopped
parsley to taste
1 c. cabbage, finely chopped
1/2 c. potatoes, cubed
1 c. tomatoes
1 pt. thick sour cream

Boil the meat in seasoned water until soft. Add all greens and vegetables and simmer until tender.

Just before services, add sour cream and more water if needed. I like vinegar on the side.
