1 bag California blend vegetables 1 stick butter 1 roll crackers (ritz, town house etc..) 1 lb Velveeta cheese
Cook vegatables until tender. Drain and put into greased casserole dish. Cut velveeta cheese into cubes and place on top. Crush crackers and sprinkle over top. Melt butter and pour over mixture. Bake @ 350º for about 45min or until cheese is melted.
