½ cup butter
1 cup sugar
2 whole eggs
2 egg yolks
Juice and pulp from 2 lemons

Directions:
Directions:
Put whole egg and egg yolks into top of double boiler. Beat gently until whites and yolks are mixed. Add rest of ingredients. Stir with wooden spoon and cook over gently boiling water until consistency of mayonnaise. Store in covered jar in refrigerator. Will keep for weeks.

This is the very best lemon filling there is. Mom's made it for years at Christmas - it lasts and lasts in the fridge, so you can sneak a dollop out at midnight for weeks. Remember to add a little whipped cream as you do it.
