Have butcher split the bone.
Trim visiible fat.
Srpinkle with spices....coarse black pepper, italian, cumin, roasted garlic / red pepper, salt, garlic.
Brown in oil.
Add 2 1/2 - 3 qts. of water.
Add sliced onions, japs, parsley more spices, bay leaves, etc...and if you want a can of tomatoes, 1/2 cup of vinegar, cumin, etc......
Cook at least 2 1/2 hours or until tender.
Drain and eat.
