6 large baking potatoes, peeled and thinly sliced
1 c. grated Cheddar cheese
1 c. grated Swiss or Gruyere cheese
1 c. chicken stock, heated
1/2 c. freshly grated Parmesan cheese
fresh ground black pepper

Directions:
Directions:
Mix the Cheddar and Swiss/Gruyere cheese together in a small bowl.

Grease a large baking pan or casserole and layer half the sliced potatoes in it.

Season with pepper and cover with half of the cheese mixture.

Top the casserole with the remaining potatoes, season, and then sprinkle with the rest of the Cheddar-Swiss/Gruyere cheese.

Pour the hot chicken stock into the pan and spread the Parmesan cheese on top of the dish.

Bake at 375º for one hour or until the potatoes are tender and golden.
