Salad Ingredients:

4 c. diced cooked chicken
2 green onions, thinly sliced
1 c. drained unsweetened pineapple chunks
1 - 8 oz. can water chestnuts, drained & thinly sliced
2/3 c. chopped celery



Hawaiian Dressing (Makes 1 cup):

1/2 c. (4 oz.) plain low fat yogurt
1/2 c. calorie reduced mayonnaise
2 tsp. lemon juice
1 Tbsp. honey
1 tsp. grated fresh ginger
1/4 tsp. paprika


Topping:

1/3 c. toasted slivered almonds

Blend Hawaiian dressing ingredients and refrigerate. Mix salad ingredients and stir in 1 cup of Hawaiian dressing. Sprinkle 1/3 c. toasted slivered almonds on top. May serve on lettuce.
