3 eggs, beaten light and foamy
2 c. sugar
3 tsp. vanilla
1 c. oil
2 c. zucchini, grated (do not peel)
3 tsp. cinnamon
1 tsp. salt
1 tsp. soda
3 c. flour
1/2 c. chopped nuts

Directions:
Directions:
Mix together eggs, sugar, vanilla, oil, and zucchini. Sift together cinnamon, salt, soda, and flour, and add to first mixture. Add nuts if desired. Bake in 2 greased, floured loaf pans for 1 hour at 325.
