8 cups spinach leaves
1 avocado, thinly sliced
1/2 cup red onion, thinly sliced (optional)
1/2 cup dried cranberries
4oz feta cheese
1/2 cup candied pecans (Emerald)

4 Tbsp cranberry juice cocktail concentrate
4 Tbsp rice wine vinegar
1 1/2 tsp Dijon mustard
1/4 tsp ground pepper
1/2 cup vegetable or canola oil

Combine all dressing ingredients in a jar and shake well until blended. Combine salad ingredients and toss with dressing.
