2 (10 oz.) frozen spinach, thawed and squeezed dry
2 eggs, slightly beaten
1 medium onion, chopped
8 oz. cottage cheese
4 tbsp. butter, melted
2 cup Parmesan cheese
8 oz. Mozzarella cheese

Directions:
Directions:
Mix together spinach, eggs, onion, cottage cheese, 1 cup
Parmesan cheese, and 2 tbsp. butter. Spray 8 x 10 inch baking dish with cooking spray and place in the dish, spreading it even. Sprinkle 1 cup Parmesan cheese and Mozzarella cheese over the top and dribble 2 tbsp. butter over the cheese Bake for 20 minutes at 350 degrees and allow to set for 20 minutes before serving.
