1 lb. Tilapia fillets 2 T. butter 1 medium onion, chopped 1/4 tsp. dried thyme 1 4-oz. can sliced mushrooms
Preheat oven to 450º. Thaw fish, if frozen, in cold running water. In a frying pan, melt the butter. Add the onion, thyme, and mushrooms, and cook until onion pieces are tender. Lightly grease an 8"x8" baking dish with nonstick cooking spray. Place the fish in the dish and spoon the onion mixture over the fish. Bake, covered, for 15-19 minutes.
