1 9" deep dish pie crust
Filling:
3 egg yolks
2 c. milk
1 c. sugar
2 T. cornstarch
1/4 t. salt
2 T. cocoa or 1 c. grated coconut
2 T. butter
1 t. vanilla
Meringue:
3 egg whites
1/4 c. sugar
pinch salt

Directions:
Directions:
Bake pie crust according to package directions. In microwave safe bowl, combine egg yolks, milk, sugar, cornstarch and salt. Include cocoa in the mixture if making chocolate pie. Microwave mixture on high for 4 minutes. Stir. Microwave 3 more minutes. Stir in butter and vanilla. Stir in coconut if making coconut pie. Pour into pie crust. Beat egg whites, sugar and salt until stiff peaks form. Spread over filling, covering filling completely. Bake at 350 until meringue is golden brown. Cool. Refrigerate.
