Cooking spray
1 1/2 cups chopped onions
1 1/2 cups coarsely chopped green bell peppers
2 tsp. minced roasted garlic
1 tbsp. flour
2 cups peeled, cubed, butternut, or acorn, squash (1/2 inch cubes)
2 cans (16 oz. each) reduced-sodium diced tomatoes, undrained
1 can (15 oz) red kidney beans, rinsed, drained
1 can (13 1/4 oz.) baby Lima
beans, rinsed, drained
1/2 - 3/4 tsp. Italian seasoning
Salt and pepper to taste

Directions:
Spray large saucepan with cooking spray; heat over medium heat until hot. Saute onions, bell peppers, and garlic until tender, about 8 minutes. Stir in flour, cook 1 minute longer.

Add remaining ingredients, except salt and pepper, to saucepan; heat to boiling. Reduce heat and simmer 10 - 15 minutes. Season to taste with salt and pepper.
