1 bunch spinach
1 yellow bell pepper
1 small red inion, thinly sliced
3 cloves garlic, minced
1/3 cup olive oil
3 tbsp. balsamic vinegar or 2 tbsp. red wine vinegar
1/2 cup coarsely chopped pistachios

Directions:
Directions:
Place first 4 ingredients in bowl. Heat oil, add vinegar. Immediately pour over spinach to coat. Sprinkle with nuts, salt and pepper.
