3 lb beef roast
1 small onion, sliced
1 clove garlic
potatoes, quartered
carrots, peeled and cut in 1/3

Salt and lightly flour roast, brown in pan before putting in oven at 350º. Mince 1 clove garlic and insert garlic buds in roast. Time according to size of roast. We like ours well done, so figures on about 3 hours. If browns, turn and add a little water. If not brown, remove lid.

Add onions at any time, add a little water, carrots and potatoes last 45 minutes.

Put meet on platter. Make gravy, be sure to get brownings from pan. Some prefer without lid or until it browns.

Really personal preference. I always like a beef roast well done, but if too well done, will be tough.
