Ingredients: 3 large baking potatoes 1/2 cup sliced green onion 1/2 cup butter - divided 1/2 cup half and half 1/2 cup sour cream 1 tsp. salt 1/2 tsp. white pepper 1 cup shredded cheddar cheese paprika

Directions: |
Directions:1. Microwave potatoes wrapped in wax paper (poke the potatoes through the wax paper with a fork a couple times) for eight minutes. Turn over and microwave for another four minutes. 2. Cut each potato in 1/2 lengthwise. Scoop out the middle leaving a thin shell. Place the middle of potato in a bowl and mash. 3. In a skillet, saute onions in 1/4 cup of butter until tender. 4. Stir sauted onions into potato pulp along with cream, sour cream, salt and pepper. Fold in the cheese, 5. Spoon mixture into potato shells. Place on a baking sheet. Melt the remaining butter and drizzle it over the potatoes. Sprinkle with paprika. 6. Bake uncovered at 350º for 20-30 minutes or until heated through. |
