8-10 medium potatoes
salt and pepper to taste
1 - 8 oz. cream cheese, softened
2 eggs beaten lightly
2 T flour
2 T minced fresh parsley
1 small onion, grated
1 - 3 1/2 oz. French-fried onions

Directions:
Directions:
Peel and boil potatoes until tender. Drain and mash with electric beater. Add salt/pepper, then cream cheese. Beat until smooth. Blend in eggs, four, parsley and onions. Beat thoroughly. Put into buttered (or PAM) casserole dish. Spread slightly crushed onions over top. Bake uncovered 325
