"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Combine dry ingredients. Cut up cold butter and add to flour mix. Using hands combine until mix is like sand (no pieces of butter). Add buttermilk, mixing until just combined. Add chocolate chips being careful not to overmix. Shape into desired scones. Use pastry brush to baste with buttermilk (can mix with yolk), then sprinkle sugar over top.
Bake at 350º until light golden brown.

Personal Notes:
Personal Notes:
These are actually easy to make. When combining butter and flour mixture imagine breaking butter into tiny, tiny parts and coating each with flour. It may seem impossible at first but it goes quickly. If you have long nails be prepared for them to get caked!
