1/4 lb. shredded cheddar cheese
4-6 eggs
6 tbsp. whipping cream (16 tbsp. =1/2 pt.)
2 tbsp. butter
Salt, pepper, and chives to taste.

Butter baking dish. Sprinkle with cheese. Break eggs, leaving them whole over cheese. (I usually make an indent in cheese for egg). Pour cream over eggs. Dot with butter and season as desired with salt, pepper and chives. Bake 350 for 15 minutes.

Pull out eggs before totally firm as they will continue to cook. Minimize the whipping cream so that eggs firm up. For a large group use the following: 48 eggs, 1 1/2 cups whip cream, 1 1/2 - 2 lbs. cheese: Makes 6 batches and requires 6 - 9 x 13 pans.
