2 cups flour
2 cups quick-cooking oats, uncooked
1 tsp baking soda
1/4 tsp salt
1 cup brown sugar, packed
3/4 cup butter
1 (8 oz.package) pitted dates, chopped
1 cup water
1 cup sugar

Directions:
Directions:
Preheat oven to 325º.

Combine flour, oats, salt, and brown sugar, cut in butter with a pastry blender until mixture resembles coarse meal.
Pres half of the mixture into an ungreased 12 x 8 x 2-inch baking pan.

Combine dates, 1 cup sugar and water in a medium saucepan; cook over low heat until sugar dissolve and dates are soft. (mixture should be thick and mushy.) Spread mixture evenly over dough in pan; cover with the remaining oat mixture.

Bake for 40 minutes or until lightly browned.

Cut into 2 x 1-inch bars while still warm. remove to wire rack to cool.

I like to wrap each bar separate in plastic wrap.
